sprung to mind immediately. I'd probably put this down as homage...

Recently heard this for the first time James Hanns And The "Soul" Entertainers ‎– It's A Fine Thing

As for ones that you wish you'd never heard.  Take one of Jamaica's most underrated vocal groups, The Silvertones.  Put the legendary Coxsone Dodd at the production console.  Cover The Invitations' "What's Wrong With Me Baby" and unleash an abomination onto the world that sounds like the theme from Supermarket Sweep or summat.  Thank God I can't find it on YouTube.

I thought his intro about how only he liked his first recording on Decca was a self admittance of ripping of a 'northern classic' would have passed the criteria with an element of humour, but hey ho, your the boss.

Sweat Pea by Soul Hooligan samples Dean Parrish - I'm on my way &  The Champ  by the Mohawks. The Mohawks track samples Tramp by Otis & Carla

Probably use of the DP rift causes people into Northern to 'associate' very quickly with the new track and liking DP IMOMW subconsciously like Sweet Pea. An old trick was to start your record with the same intro to a very popular 'hit'  and people who listened & bought the hit might be more likely to listen and buy the newer outing.

Not northern but Chicago players streetsounds was turned into bucket heads to great effect.

 

there must be thousands of soul and disco used in house music and hip hop.

 

cypress hill used gene chandler duke of earl.

 

freddie Scott you got what I need has been used more than once in hip hop.

 

shapeshifters used Johnnie Taylor fairly recently

 

by recently in mean 15 years ago !!
