If I'm thinking along the same lines as the original poster to me the break is the bit in the middle of a vocal record (not instrumental where there is a "musical interlude" with no vocals. Usually between the 2nd / 3rd verse and the final verse of a tune. My favourite, which I think is absolutely stunning, is when the strings come in in the middle of Juanitta Williams - Baby Boy.
