What record would you have wanted your favourite Northern male/female/group (dead or alive) to have covered- that is Non-N.S.

Maybe (...only maybe) exclude some obvious one's e.g. Beatles/Lennon & McCartney, etc.

Slightly off topic, but the Isley Brothers this old heart of mine was allocated to the 4 tops. They couldn't make the session so the Isleys stood in. I would give a lot to have heard the Tops sing that using the same backing track.
